Jason grew up in this business — on the shop floor, in the trucks, learning every detail of the trade from his father Robert. He didn't inherit a title; he earned the craft.

Today, Jason manages every customer personally. When you call Ambrosi Knife Service, you get Jason directly. His number is on every invoice — not a customer service line, not an email form. The owner, every time.

What areas do you service?

We service the entire tri-state area — all of New York state including New York City and all five boroughs, Westchester, the Hudson Valley, the Catskills, and Long Island. We also cover all of New Jersey and Connecticut. If you're in the tri-state region and need professional knife sharpening, we come to you.

How does the weekly knife exchange work?

We supply your kitchen with two identical sets of knives. Each week, we stop by, pick up your dull set, and leave freshly sharpened and sanitized replacements. Your kitchen never runs without sharp tools, and you never have to think about maintenance. We handle everything — supply, sharpening, sanitizing, and delivery.

How often do you come to service my account?

We offer weekly or bi-weekly service depending on your operation's needs. Most of our commercial accounts opt for weekly service. This is one of the key differences between us and competitors — most other companies only come every other week. We believe consistent, weekly service keeps your kitchen running at its best without interruption.

Who do I call if I have a question or issue?

You call Jason directly. His personal number is on every invoice we send. There's no customer service hotline, no call center, no automated system. When you call Ambrosi Knife Service, you get the fourth-generation owner on the phone — the same person who built your service plan and knows your account.

What types of businesses do you work with?

We work with any commercial or institutional establishment that uses blades — restaurants, bars, delis, butchers, meat markets, catering halls, grocery stores, hospitals, hotel kitchens, country clubs, food trucks, and more. If your operation depends on sharp blades, we can build a service program around your specific needs.

What blades do you sharpen beyond kitchen knives?

In addition to all types of kitchen knives, we sharpen food processor blades, grinder plates and knives, and can opener blades. If it cuts food in your commercial kitchen, we can maintain it as part of your service program.
